Angel Noodle Salad

1In a pot over medium, boil 2 cups of water and add the angel hair and cook for a few minutes and drain the water

2In a separate pot of water over medium heat cook the snow peas for a few minutes and drain well

3In a medium sized bowl add the spring onion, purple and green cabbage, spinach, capsicum, coriander leaves, almond flakes and mix through the angel hair and snow peas.

4Pour the dressing over the salad and mix through



1 cup Slender angel hair noodles

1 cup Purple cabbage, chopped

1/2 cup Green cabbage, chopped

1/2 cup English spinach, wilted

1/2 cup Red capsicum, sliced

2 Spring onion, diced

1 cup Coriander leaves

1/3 cup Snow peas

15 g Slivered almonds

1/4 cup Lime juice

2 tbsp Sesame Oil

1 Small red chilli, thinly slices

2 tsp Fresh ginger
